Chefs and independent restaurateurs in Quebec gastronomy: a lever for the economic relaunch of Montréal and Quebec

The Chamber of Commerce of Metropolitan Montreal is proud to present Chefs et restaurateurs indépendants de la gastronomie québécoise : un levier pour la relance économique de Montréal et du Québec (Chefs and independent restaurateurs in Quebec gastronomy: a lever for the economic relaunch of Montréal and Quebec), an impact study and roadmap for the development of the gastronomy sector in Montréal and Quebec.

The project, initiated by Normand Laprise (Toqué!) and Charles-Antoine Crête (Montréal Plaza) and conducted by the consulting firm IdéesFX, is intended to identify the conditions required for the sector to fully play its role as a lever in the economic relaunch of Montréal and Quebec.

The study proposes introducing a mobilization vehicle for the gastronomy sector that will be a hybrid between a cluster, an alliance, and a community of practice. The mission of this vehicle will be to accelerate the evolution and development of the gastronomy sector and niche production by focusing on mobilization and partnerships to come up with value-added projects that will make it possible to:

1.  Develop the ecosystem of niche producers by reinforcing and structuring their relationship with major restaurateurs to accelerate innovation and facilitate its financing;

2.  Value and develop the culinary trades and, specifically, the cooking trades, in partnership with schools;

3.  Structure research and development in the gastronomy sector, including accelerating the introduction of technology;

4.  Increase the international influence of Quebec gastronomy, in partnership with organizations that make that their main mission, for example, Tourisme Montréal.

About the Chefs and independent restaurateurs in Quebec gastronomy: a lever for the economic relaunch of Montréal and Quebec impact study

This impact study was developed by the Chamber of Commerce of Metropolitan Montreal and conducted by the consulting firm IdéesFX with the financial participation of the Ministère de l’Économie et de l’Innovation. The project, based on the mobilization of the gastronomy sector, was initiated by chefs Normand Laprise from Toqué and Charles-Antoine Crête from Montréal Plaza. The study was conducted as part of the CCMM “I love working downtown” project.
